- 1 Cup buttermilk chilled
- 16 Tbsp frozen butter or two sticks
- 3 1/2 Cups all-purpose flour
- 4 Tsp baking powder
- 1 Tsp salt
- 1 Tbsp sugar
- 1 Cup heavy cream
Preheat the oven to 450°F
Mix the flour, baking powder, and salt together.
Cut the frozen butter into cubes and add half the amount to the food processor at a time and blend.
Blend until the mixture is a sandy crumbly texture.
Next add the heavy cream and buttermilk and blend until a dough is formed.
Roll the dough onto a floured surface into a rectangle. Fold the dough over itself 3 times and then roll into a rectangle again.
Make the rectangle an inch and a half tall and use a biscuit cutter or a small mason jar to cut out the biscuits.
Place them in a 12 inch cast iron skillet or on a baking sheet and brush the tops with heavy cream.
Bake for 10-15minutes or until the tops are golden brown.
Let cool for 5 minutes and serve warm and enjoy!
Make sure your butter is frozen and your heavy cream and buttermilk is very cold.
Do not knead or over work the dough, it will make the biscuits tough.
You can freeze the raw biscuits and then bake them straight from frozen.
