In a large bowl mix bread flour, salt, and yeast until combined.
Add the warm water and mix until a dough is formed and then shape it into a ball.
Grease the ball with cooking spray or any mild tasting oil and cover with plastic wrap.
Place the bowl in the fridge and let it rise for 12- 24 hours.
After the dough has risen in the fridge place on the counter 30 minutes before you want to make you pizza so it comes to room temperature. It will be easier to press into your cast iron pan this way.
Coat the bottom of the cast iron pan in olive oil.
Press the dough into the pan to the edges.
Let the dough rise another hour while you prepare the sauce.
Smooth the sauce over the dough until an inch away from the edge.
Put mozzarella cheese in the middle and the Monterrey towards the outer edge. The cheese on the outer edge will fry and create a crispy crust.
Put whatever other topping you would like and place into a 400 degree oven for 25 minutes-30 minutes.
If the bottom of the crust is not brown enough, place on the stove and cook on medium heat for 2-5 minutes.
Place on cooling rack and let cool for 10 minuets
