If you have a sourdough starter then I bet you are familiar with having to feed and discard it. I hate throwing things away and feeling wasteful so I looked into finding ways of using my discard.

5 Easy Sourdough Discard Recipes
1. Sourdough Pancakes
These pancakes are soft, fluffy and packed with flavor. Add in your favorite fruits and nuts to have endless flavor combinations! My favorite ways to make them are with blueberries, bananas or chocolate chips. These pancakes freeze and reheat well so recommend making a double batch to freeze for breakfast during the week
2. Sourdough Tortillas
These tortillas are perfect for making wraps, breakfast burritos, and my personal favorite, quesadillas! They require no rise time and can be made from start to finish in about an hour. Store them in and zip lock in the fridge for about a week or freeze them for meal prep during the week.
3. Sourdough Muffins
When I first heard about sourdough muffins I thought it was pretty odd to add sourdough starter to something that was suppose to be sweet. Boy was I wrong! These muffins have so much flavor and the sourdough adds just the right amount of tang that balances out the sweetness.
I like to add chocolate chips and nuts to this recipe but you can add any fruit or topping that you would like. They are great for a quick breakfast, snack or even dessert!
4. Sourdough Crackers
Sourdough cracker are so easy and have so many variations. I’ve seen people roll and cut them into all kinds of different shapes. Top them with fresh herbs and your choice of seasonings and you will have endless flavor combinations.
This recipe is a great one if you are on a time crunch and have a lot of discard to use. I usually makes these once a week for grab and go snacks for my kids.
5. Sourdough Bagels
I really can’t say enough about these bagels, they are so good! I love how I can make the dough in the morning and just let it sit on my counter all day. All I do is do a stretch and fold every hour or so when I pass by throughout the day.
My family goes through these so quick that I pretty much have to make a new batch every week. I recommend saving yourself the trouble and just make a double batch and freeze them. Add any topping you want! I love everything seasoning and cinnamon raisins bagels but the possibilities are endless.
